Watermelon & Mint Salad with Feta

Serves: 4-6

Time: 15 minutes

Ingredients:

  • 4 cups cubed watermelon (cut into 1-inch pieces)
  • 1/4 cup fresh mint leaves, torn or chopped
  • 4 oz feta cheese, crumbled
  • 1 small shallot (minced or thinly sliced)
  • 1/4 cup toasted pine nuts or chopped pistachios (optional)
  • 2 tablespoons fresh lime juice
  • 3 tablespoons extra virgin olive oil (we like Arbequina or Arbosana)*
  • 1 tablespoon honey*
  • 1/4 teaspoon salt*
  • freshly ground black pepper to taste

Directions:

  1. Cut your watermelon into 1-inch cubes. Pat dry with paper towels to remove excess moisture and place in a large serving bowl.
  2. Add the shallot and torn mint leaves to the watermelon.
  3. To make the dressing, whisk together lime juice, extra virgin olive oil, honey, salt, and pepper in a small bowl until well combined.
  4. Pour the dressing over the watermelon mixture and gently toss to combine.
  5. Add the crumbled feta cheese and gently fold it in, being careful not to break up the cheese too much.
  6. Top with toasted pine nuts or pistachios if using. Serve immediately for the best texture and flavor.

Tips: This salad is best served fresh, as the watermelon will release juices over time.
