Serves: 4-6
Time: 15 minutes
Ingredients:
- 4 cups cubed watermelon (cut into 1-inch pieces)
- 1/4 cup fresh mint leaves, torn or chopped
- 4 oz feta cheese, crumbled
- 1 small shallot (minced or thinly sliced)
- 1/4 cup toasted pine nuts or chopped pistachios (optional)
- 2 tablespoons fresh lime juice
- 3 tablespoons extra virgin olive oil (we like Arbequina or Arbosana)*
- 1 tablespoon honey*
- 1/4 teaspoon salt*
- freshly ground black pepper to taste
Directions:
- Cut your watermelon into 1-inch cubes. Pat dry with paper towels to remove excess moisture and place in a large serving bowl.
- Add the shallot and torn mint leaves to the watermelon.
- To make the dressing, whisk together lime juice, extra virgin olive oil, honey, salt, and pepper in a small bowl until well combined.
- Pour the dressing over the watermelon mixture and gently toss to combine.
- Add the crumbled feta cheese and gently fold it in, being careful not to break up the cheese too much.
- Top with toasted pine nuts or pistachios if using. Serve immediately for the best texture and flavor.
Tips: This salad is best served fresh, as the watermelon will release juices over time.
