Time: 15 minutes
Ingredients:
- 2 oranges (I prefer Cara Cara)
- 1 small fennel bulb
- 2 cups butter lettuce
- 1/3 red onion, thinly sliced
- handful of roasted pistachios, chopped
- 1/4 cup orange juice
- 3 tablespoons olive oil* (I use Arbequina)
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 clove of garlic, crushed
- salt and pepper to taste
Directions:
- Cut off the top and bottom of your oranges and remove the peel. Slice the peeled oranges into disks and then cut those in half.
- Remove the greens from the top of the fennel and thinly slice the bulb.
- Wash your butter lettuce and let it dry completely. Then, rip it into small pieces and add to the bottom of your serving bowl or platter. Next, add your fennel, red onion, and oranges. Set aside.
- To make your dressing, combine orange juice, olive oil, honey, Dijon mustard, garlic, and salt and pepper in a jar. Give it a good shake and then pour it over your salad and toss together. Top with roasted pistachios and serve right away!
