Ingredients:
- 1 small Watermelon
- Feta Cheese
- 8 sprigs of Mint, picked
- 3 TBS OTOT’s Ancho Chili Vinegar
- 8 TBS OTOT’s Persian Lime olive oil
- Maldon Salt
- 2-3 Peaches
- 16 kebab skewers
Directions:
- Wash your produce.
- Cube the watermelon, peaches and feta into bite- sized pieces.
- In a bowl, toss the watermelon, peaches, olive oil and vinegar together so the fruit absorbs the dressing.
- Take a skewer and pierce a piece of watermelon, then feta, peach, then mint, and repeat until the skewer is full.
- Lay all the skewers on a flat plate. Pour over remaining dressing and garnish with Maldon salt if needed. Serve immediately.
