Serves 4-6
Time: 15 minutes
Ingredients:
- 8 oz washed baby spinach
- 8 oz strawberries sliced
- 1 cucumber, diced
- 5 oz crumbled goat cheese*
- ¾ cups walnuts, pecans, pine nuts, or slivered almonds
- ⅓ Cup Arbequina EVOO*
- 3 Tbs. Raspberry Balsamic Vinegar*
- Salt and Pepper to taste
Directions:
- In a small bowl (or jar) mix the olive oil, vinegar, salt, and pepper. Whisk well or shake until combined.
- In a salad bowl combine the spinach, strawberries, cucumbers, and nuts.
- Add in the dressing and toss well (toss just before serving)
- Plate and garnish with goat cheese.
